Deer Sausage
Outstanding made loose and placed in white plastic hamburger bags. I got bags at Gander Mountain.
3 lbs. fine ground venison 1 tsp. thyme
1 lb fine ground pork butt ½ tsp. nutmeg
1 lb fine ground bacon ½ tsp. cayenne pepper
1 Tbsp salt 2 bay leaves, crushed
1 Tbsp. black pepper 1 cup water
2 tsp. sage
Combine all ingredients, mix well and stuff into hamburger bags…I made it in casing too but the loose tasted better

1 ½ lbs., fine ground bacon ¾ tsp. allspice
4 cloves pressed garlic 1 tsp. grated lemon rind
2 tsp. sage 1 cup water
Combine all ingredients, mix well and stuff into hamburger bags.. I made it in casing too but the loose tasted better
